Position Title:
Bakery Sous Chef


Job Summary:


The bakery sous chef works closely with the head pastry chef or head baker to oversee all aspects of bakery production.

This includes preparing a variety of baked goods, managing inventory, supervising staff, ensuring food safety standards are met, and maintaining a clean and organized kitchen environment.


Responsibilities:

Baking and Production:


  • Assist in the preparation of a wide range of baked goods, including bread, pastries, cakes, and desserts.
  • Follow standardized recipes and techniques to ensure consistency and quality of products.
  • Oversee baking processes, including proofing, shaping, and baking, to achieve desired results.
  • Monitor baking equipment and troubleshoot any issues that arise.

Inventory Management:


  • Maintain accurate inventory records of all baking ingredients and supplies.
  • Place orders for ingredients and supplies as needed, ensuring adequate stock levels to meet production demands.
  • Rotate stock and monitor expiration dates to minimize waste.

Staff Supervision:


  • Train and mentor bakery staff in proper baking techniques, food safety procedures, and kitchen organization.

Quality Control:


  • Conduct regular inspections of baked goods to ensure they meet quality standards in terms of taste, texture, and appearance.
  • Uphold food safety and sanitation standards at all times, including proper handling and storage of ingredients, as well as cleanliness of work areas and equipment.

Menu Development:


  • Collaborate with the head pastry chef or head baker to develop new recipes and menu items.
  • Experiment with different ingredients and techniques to innovate and improve existing products.
  • Stay updated on industry trends and incorporate new ideas into the bakery's offerings.

Customer Service:


  • Interact with customers in a friendly and professional manner, providing information about bakery products and answering any questions they may have.
  • Listen to customer feedback and use it to improve product offerings and customer satisfaction.

Qualifications:


  • Thorough knowledge of baking techniques, ingredients, and equipment.
  • Strong organizational skills and attention to detail.
  • Excellent communication and interpersonal skills.
  • Flexibility to work early mornings, evenings, weekends, and holidays as required.
  • Culinary degree or equivalent certification is preferred but not required.
