Position Purpose:


Responsible for maximizing profits and minimizing losses in liaison with the Purchase & Finance department by exercising controls on all the Food & Beverage items sold.

Planning, organizing, coordinating and controlling the implementation of the stipulated Food & Beverage Control Systems and procedures to optimize returns on cost in Food & Beverage and to achieve economy in Food & Beverage costs


Duties and Responsibilities

  • To create Standard Operating Procedures & ensure that the SOP's are followed in Food & Beverage Controls department.
  • To monitor the Overall operation of the food and beverage stores, purchasing, and receiving departments, and submission of reports, as per SOPs.
  • To report all mistakes and/or failures to follow procedures immediately to the General Manager.
  • To calculate and submit adjusted monthly food and beverage costs for the Company.
  • To calculate and up-date food and beverage recipes, in co-operation with Chef and Purchasing department.
  • Ensure daily revenue audit activities are conducted.
  • Ensure store room purchasing & receiving procedures are adhered as per the SOP's.
  • Planning, organizing and controlling the stipulated cost control system and procedures to optimize profitability.
  • Designing cost control systems and procedures
  • Establishing and checking of purchase specifications and periodically to review them to ensure that they are implemented; observe that competitive market prices are being obtained, participate in market surveys and make comparison of purchase prices with other Units.
  • To monitor slow moving stock items held in storage and to highlight them on a timely basis; recommend methods and procedures to improve control of waste and losses within the Unit and to investigate reasons for spoilage

  • To achieve economy in F&B costs to increase profitability.
  • Ensure conformities to regular MIS.
  • Conduct regular Audits at outlets and central stores.
  • To ensure full conformity to the quality standards/ policy in terms of implementation, documentation, process definitions & record keeping.
