Job Description for Commi

Making recipes as per the instruction of the Chef.
Ensure that the highest degree of hygiene and cleanliness of all equipment and utensils are maintained in Kitchen.
Continental food knowledge preferred.
Accurately measuring meal ingredients for the Chef de Partie.
Responsible for preparing and cooking all food items by the recipe and to specification.
Wash and peel fresh fruits, vegetables and also able to weigh, measure and mix ingredients on correct proportions.
Have general knowledge of cooking temperatures, making soups & sauces.
Check and ensure the correctness of the temperature of appliances and food.
Minimize waste and maintain controls to attain forecasted food cost.
Preparing basic sauces & curries as directed by the Chef de Partie.
Receiving deliveries and verifying that all ordered items have been delivered and are of good quality.
Taking inventory of kitchen supplies and notifying the supervisor of low or depleted items.
Discarding all expired and spoiled food items stored in the stock rooms, refrigerators, and freezers.
Performing basic cleaning duties and ensuring that workstations are properly sanitized.
Plating and presenting meal items as per the Chef de Parties' instructions.
Able to operate kitchen equipment like braising pan, baking ovens, stoves, grills, microwaves and fryers.
Assists in providing on the job training & development of new cooks
